What Is It?
Cinnamon is one of the world’s oldest and most traded spices. The dried inner bark of trees from the Cinnamomum genus. Indonesia is the world’s second-largest cinnamon producer, primarily producing Cinnamomum burmannii, commonly known as Korintje or Padang cinnamon which has a bold, intense, and slightly spicy flavour compared to the milder Ceylon cinnamon from Sri Lanka. Indonesian cassia cinnamon is the most commonly used cinnamon in the United States and widely exported globally in stick (quill) form and as ground powder. The sticks are formed by rolling and drying strips of inner bark, a careful, artisanal harvesting process done by experienced farmers in Sumatra. Beyond its culinary value, cinnamon contains cinnamaldehyde, a compound studied for its antioxidant, anti-inflammatory, and blood-sugar-regulating properties. Making it popular in wellness product categories.
