What Is It?
Coconut sugar (also called coconut palm sugar) is a natural sweetener produced from the sap of the coconut palm tree’s flower blossoms. Indonesian farmers collect the sap by making incisions at the flower stem, the liquid flows out and is collected, then boiled and dehydrated until it crystallises into granular sugar. Indonesia is one of the world’s leading coconut sugar producers, particularly in Java and Sulawesi. Unlike refined white sugar, coconut sugar retains trace minerals from the sap including iron, zinc, calcium, and potassium, along with a small amount of inulin fibre and antioxidants. Its glycemic index (GI) is approximately 35–54, notably lower than refined white sugar (GI 65) or high-fructose corn syrup. Making it appealing to health-conscious consumers.
