Cocoa butter is the natural, ivory-coloured fat extracted from roasted cocoa beans (Theobroma cacao) through a hydraulic pressing process. After fermenting and roasting cocoa beans, the beans are crushed into cocoa mass (chocolate liquor), which is then pressed to separate the fat (cocoa butter) from the dry solid (cocoa powder). Indonesia is one of the world’s top three cocoa producers, primarily in Sulawesi, Sumatra, and Java. Making it a key source of competitively priced cocoa butter.
